  • Lamb or beef liver - 300 grams

  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Rinse the liver under cold water and pat dry with paper towels. Cut into bite-sized pieces.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté for about 10 minutes until they are golden and caramelized, stirring occasionally.
  3. Add the minced garlic, ground cumin, paprika, cayenne pepper, salt, and black pepper to the skillet. Stir well and cook for an additional 2 minutes to release the spices' aromas.
  4. Increase the heat to medium-high and add the liver pieces to the skillet. Cook for about 5-7 minutes, stirring frequently until the liver is browned but still tender.
  5. Remove from heat, squeeze fresh lemon juice over the liver, and sprinkle with chopped parsley. Serve immediately.
