- Lamb or beef liver - 300 grams
- Onions - 2 medium, thinly sliced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Rinse the liver under cold water and pat dry with paper towels. Cut into bite-sized pieces.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté for about 10 minutes until they are golden and caramelized, stirring occasionally.
- Add the minced garlic, ground cumin, paprika, cayenne pepper, salt, and black pepper to the skillet. Stir well and cook for an additional 2 minutes to release the spices' aromas.
- Increase the heat to medium-high and add the liver pieces to the skillet. Cook for about 5-7 minutes, stirring frequently until the liver is browned but still tender.
- Remove from heat, squeeze fresh lemon juice over the liver, and sprinkle with chopped parsley. Serve immediately.
