Ingredients

  • Chicken breast - 300 grams
  • Red bell pepper - 1 medium, cut into cubes
  • Zucchini - 1 medium, cut into cubes
  • Red onion - 1 medium, cut into wedges
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Cilantro - 1/4 cup, chopped
  • Parsley - 1/4 cup, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Wooden or metal skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a bowl, mix together the olive oil, minced garlic, chopped cilantro, chopped parsley, cumin, paprika, cayenne pepper, lemon juice, salt, and black pepper to create the chermoula marinade.
  2. Cut the chicken breast into 2.5 cm cubes and add them to the marinade, making sure each piece is well coated. Cover and marinate in the refrigerator for at least 15 minutes.
  3. While the chicken marinates, prepare the vegetables by cutting the red bell pepper, zucchini, and red onion into suitable sizes for skewering.
  4. Preheat your grill or BBQ to medium-high heat.
  5. Thread the marinated chicken and vegetables onto the skewers, alternating between chicken and veggies.
  6. Once the grill is hot, place the skewers on it and cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove the skewers from the grill and let them rest for a few minutes before serving.
