Ingredients

  • Lamb shoulder - 400 grams, cubed

  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Almonds - 30 grams, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a bowl, combine the cubed lamb, olive oil, minced garlic, ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper. Mix well to coat the meat evenly with the spices.
  2. Cover the bowl and marinate the lamb in the refrigerator for at least 30 minutes, or up to 4 hours for better flavor.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated lamb onto skewers, leaving a little space between each piece.
  5. Grill the skewers for about 10-15 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
  6. In the last few minutes of grilling, sprinkle the chopped almonds on top of the skewers to toast them lightly.
  7. Remove the kebabs from the grill and drizzle with lemon juice, then garnish with chopped parsley before serving.
