Ingredients

  • Chicken breast - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Red bell pepper - 1, cut into chunks
  • Zucchini - 1 small, cut into rounds
  • Red onion - 1 small, cut into wedges
  • Fresh parsley - for garnish

Steps

  1. In a bowl, combine olive oil, minced garlic, paprika, cumin, coriander, cayenne pepper, salt, black pepper, and lemon juice to create the marinade.
  2. Cut the chicken breast into 2.5 cm cubes and add them to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 15 minutes.
  3. While the chicken is marinating, prepare the vegetables by cutting the red bell pepper, zucchini, and red onion into appropriate sizes for skewering.
  4. Preheat your grill or barbecue to medium-high heat.
  5. Thread the marinated chicken and vegetables onto skewers, alternating between chicken and veggies.
  6. Once the grill is hot, place the skewers on it and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 75°C.
  7. Remove the skewers from the grill, let them rest for a couple of minutes, and then garnish with fresh parsley before serving.
