- Chicken breast - 300 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Red bell pepper - 1, cut into chunks
- Zucchini - 1 small, cut into rounds
- Red onion - 1 small, cut into wedges
- Fresh parsley - for garnish
Steps
- In a bowl, combine olive oil, minced garlic, paprika, cumin, coriander, cayenne pepper, salt, black pepper, and lemon juice to create the marinade.
- Cut the chicken breast into 2.5 cm cubes and add them to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 15 minutes.
- While the chicken is marinating, prepare the vegetables by cutting the red bell pepper, zucchini, and red onion into appropriate sizes for skewering.
- Preheat your grill or barbecue to medium-high heat.
- Thread the marinated chicken and vegetables onto skewers, alternating between chicken and veggies.
- Once the grill is hot, place the skewers on it and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 75°C.
- Remove the skewers from the grill, let them rest for a couple of minutes, and then garnish with fresh parsley before serving.
