- Chicken breast - 300 grams, cubed
- Red bell pepper - 1, cut into chunks
- Yellow onion - 1, cut into chunks
- Zucchini - 1, sliced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Lemon wedges - 2 (for serving)
Steps
- In a bowl, combine olive oil, minced garlic, cumin, coriander, paprika, cinnamon, salt, and black pepper to create a marinade.
- Add the cubed chicken breast to the marinade and mix well. Cover and refrigerate for at least 1 hour, ideally overnight.
- Soak wooden skewers in water for 30 minutes to prevent burning on the grill.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, red bell pepper, onion, and zucchini onto the skewers, alternating between ingredients.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove the skewers from the grill and let them rest for a few minutes.
- Garnish with chopped fresh parsley and serve with lemon wedges.
