Ingredients

  • Chicken breast - 300 grams, cubed
  • Red bell pepper - 1, cut into chunks
  • Yellow onion - 1, cut into chunks
  • Zucchini - 1, sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Lemon wedges - 2 (for serving)

Steps

  1. In a bowl, combine olive oil, minced garlic, cumin, coriander, paprika, cinnamon, salt, and black pepper to create a marinade.
  2. Add the cubed chicken breast to the marinade and mix well. Cover and refrigerate for at least 1 hour, ideally overnight.
  3. Soak wooden skewers in water for 30 minutes to prevent burning on the grill.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken, red bell pepper, onion, and zucchini onto the skewers, alternating between ingredients.
  6. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove the skewers from the grill and let them rest for a few minutes.
  8. Garnish with chopped fresh parsley and serve with lemon wedges.
