Ingredients

  • Lamb shoulder - 400 grams
  • Honey - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a bowl, combine honey, olive oil, minced garlic, ground cumin, ground coriander, paprika, cinnamon, salt, black pepper, lemon juice, and half of the chopped parsley to create the marinade.
  2. Cut the lamb shoulder into 2-3 large pieces and add it to the marinade, ensuring it's well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
  3. Preheat the grill to medium-high heat. Remove the lamb from the marinade and let any excess marinade drip off.
  4. Place the marinated lamb on the grill and cook for about 15-20 minutes, turning occasionally, until the internal temperature reaches 60-65°C for medium-rare.
  5. During the last few minutes of grilling, brush the lamb with the remaining marinade for a glossy finish.
  6. Remove the lamb from the grill, cover with foil, and let it rest for 5 minutes before slicing.
  7. Serve the honey-glazed lamb garnished with the remaining chopped parsley.
