Ingredients
- Lamb shoulder - 400 grams
- Honey - 2 tablespoons
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a bowl, combine honey, olive oil, minced garlic, ground cumin, ground coriander, paprika, cinnamon, salt, black pepper, lemon juice, and half of the chopped parsley to create the marinade.
- Cut the lamb shoulder into 2-3 large pieces and add it to the marinade, ensuring it's well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
- Preheat the grill to medium-high heat. Remove the lamb from the marinade and let any excess marinade drip off.
- Place the marinated lamb on the grill and cook for about 15-20 minutes, turning occasionally, until the internal temperature reaches 60-65°C for medium-rare.
- During the last few minutes of grilling, brush the lamb with the remaining marinade for a glossy finish.
- Remove the lamb from the grill, cover with foil, and let it rest for 5 minutes before slicing.
- Serve the honey-glazed lamb garnished with the remaining chopped parsley.
