- Carrots - 400 grams
- Honey - 2 tablespoons
- Olive oil - 1 tablespoon
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- Peel the carrots and cut them into sticks or rounds, about 1 cm thick.
- In a large mixing bowl, combine honey, olive oil, ground cumin, ground cinnamon, salt, and black pepper.
- Add the carrot pieces to the bowl and toss until they are evenly coated with the honey mixture.
- Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through cooking.
- Once done, remove the carrots from the oven and drizzle with fresh lemon juice.
- Garnish with chopped fresh parsley before serving.
