Ingredients

  • Carrots - 400 grams
  • Honey - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Peel the carrots and cut them into sticks or rounds, about 1 cm thick.
  3. In a large mixing bowl, combine honey, olive oil, ground cumin, ground cinnamon, salt, and black pepper.
  4. Add the carrot pieces to the bowl and toss until they are evenly coated with the honey mixture.
  5. Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 20 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through cooking.
  7. Once done, remove the carrots from the oven and drizzle with fresh lemon juice.
  8. Garnish with chopped fresh parsley before serving.
