Ingredients

  • Basmati rice - 150 grams
  • Water - 400 milliliters
  • Almonds (sliced) - 40 grams
  • Fresh parsley (chopped) - 2 tablespoons
  • Fresh cilantro (chopped) - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 1 clove
  • Vegetable broth - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon zest - 1 teaspoon

Steps

  1. Rinse the basmati rice under cold running water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the soaked and drained rice to the saucepan, stirring to coat the rice in the garlic oil. Cook for 2-3 minutes, stirring occasionally.
  4. Pour in the water and vegetable broth, then add the cumin powder, salt, and black pepper. Bring to a boil.
  5. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
  6. While the rice cooks, toast the sliced almonds in a dry skillet over medium heat for about 3-4 minutes, stirring frequently until golden brown.
  7. Once the rice is done, remove it from heat and fluff it with a fork. Stir in the chopped parsley, cilantro, lemon zest, and toasted almonds.
  8. Serve warm, garnished with additional herbs if desired.
