- Basmati rice - 150 grams
- Water - 400 milliliters
- Almonds (sliced) - 40 grams
- Fresh parsley (chopped) - 2 tablespoons
- Fresh cilantro (chopped) - 2 tablespoons
- Olive oil - 2 tablespoons
- Garlic (minced) - 1 clove
- Vegetable broth - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon zest - 1 teaspoon
Steps
- Rinse the basmati rice under cold running water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the soaked and drained rice to the saucepan, stirring to coat the rice in the garlic oil. Cook for 2-3 minutes, stirring occasionally.
- Pour in the water and vegetable broth, then add the cumin powder, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
- While the rice cooks, toast the sliced almonds in a dry skillet over medium heat for about 3-4 minutes, stirring frequently until golden brown.
- Once the rice is done, remove it from heat and fluff it with a fork. Stir in the chopped parsley, cilantro, lemon zest, and toasted almonds.
- Serve warm, garnished with additional herbs if desired.
