  • Basmati rice - 150 grams
  • Vegetable broth - 300 milliliters
  • Olive oil - 1 tablespoon
  • Onion, finely chopped - 1 small (about 100 grams)
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 small (about 50 grams)
  • Cilantro, chopped - 2 tablespoons
  • Parsley, chopped - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon zest - 1 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and diced carrot to the pan, cooking for another 2-3 minutes until fragrant.
  4. Stir in the cumin and cinnamon, cooking for an additional minute to release the spices' aroma.
  5. Drain the soaked rice and add it to the saucepan, stirring well to coat the rice with the oil and spices.
  6. Pour in the vegetable broth, add salt and black pepper, and bring the mixture to a boil.
  7. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the rice is tender and the liquid has been absorbed.
  8. Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes to allow the rice to steam.
  9. Fluff the rice with a fork, then stir in the chopped cilantro, parsley, and lemon zest before serving.
