- Basmati rice - 150 grams
- Vegetable broth - 300 milliliters
- Olive oil - 1 tablespoon
- Onion, finely chopped - 1 small (about 100 grams)
- Garlic, minced - 2 cloves
- Carrot, diced - 1 small (about 50 grams)
- Cilantro, chopped - 2 tablespoons
- Parsley, chopped - 2 tablespoons
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon zest - 1 teaspoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced carrot to the pan, cooking for another 2-3 minutes until fragrant.
- Stir in the cumin and cinnamon, cooking for an additional minute to release the spices' aroma.
- Drain the soaked rice and add it to the saucepan, stirring well to coat the rice with the oil and spices.
- Pour in the vegetable broth, add salt and black pepper, and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the rice is tender and the liquid has been absorbed.
- Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes to allow the rice to steam.
- Fluff the rice with a fork, then stir in the chopped cilantro, parsley, and lemon zest before serving.
