Ingredients

  • Basmati rice - 150 grams
  • Water - 300 ml
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they are translucent and fragrant, about 3-4 minutes.
  3. Add the rinsed rice to the saucepan, stirring to coat the grains with the oil, onions, and garlic. Toast for 2-3 minutes.
  4. Pour in the water and add cumin, cinnamon, salt, and black pepper. Stir well and bring to a boil.
  5. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the rice is cooked and water is absorbed.
  6. Remove the saucepan from heat and let it sit, covered, for another 5 minutes.
  7. Fluff the rice with a fork and gently fold in the chopped parsley, cilantro, mint, and lemon juice. Serve warm.
