Ingredients
- Basmati rice - 150 grams
- Water - 300 ml
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Fresh mint - 1 tablespoon, chopped
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they are translucent and fragrant, about 3-4 minutes.
- Add the rinsed rice to the saucepan, stirring to coat the grains with the oil, onions, and garlic. Toast for 2-3 minutes.
- Pour in the water and add cumin, cinnamon, salt, and black pepper. Stir well and bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the rice is cooked and water is absorbed.
- Remove the saucepan from heat and let it sit, covered, for another 5 minutes.
- Fluff the rice with a fork and gently fold in the chopped parsley, cilantro, mint, and lemon juice. Serve warm.
