- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- Wash and peel the potatoes, then cut them into bite-sized cubes.
- In a large mixing bowl, combine the olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper.
- Add the cubed potatoes to the bowl and toss until they are evenly coated with the herb and spice mixture.
- Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast the potatoes in the preheated oven for 20-25 minutes, or until golden brown and crispy, stirring halfway through for even cooking.
- Once cooked, remove the potatoes from the oven and immediately drizzle with lemon juice.
- Sprinkle the chopped parsley and cilantro on top before serving.
