Ingredients

  • Potatoes - 400 grams (about 2 medium-sized)
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash and peel the potatoes, then cut them into bite-sized cubes.
  3. In a large mixing bowl, combine the olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper.
  4. Add the cubed potatoes to the bowl and toss until they are evenly coated with the herb and spice mixture.
  5. Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
  6. Roast the potatoes in the preheated oven for 20-25 minutes, or until golden brown and crispy, stirring halfway through for even cooking.
  7. Once cooked, remove the potatoes from the oven and immediately drizzle with lemon juice.
  8. Sprinkle the chopped parsley and cilantro on top before serving.
