Ingredients

  • Active dry yeast - 5 grams

  • Salt - 1 teaspoon
  • Potatoes - 200 grams, thinly sliced
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a large bowl, mix flour and salt. Add the yeast mixture and olive oil, and knead until a smooth dough forms. Cover and let it rise in a warm place for about 20 minutes.
  3. While the dough is rising, preheat the oven to 220°C (428°F).
  4. Toss the thinly sliced potatoes with olive oil, garlic powder, cumin, paprika, black pepper, and lemon juice in a bowl. Spread them out on a baking sheet in a single layer.
  5. Roast the seasoned potatoes in the oven for 15-20 minutes until golden and tender, flipping halfway through.
  6. Once the dough has risen, roll it out on a floured surface to your desired thickness. Place the rolled dough on a parchment-lined baking sheet.
