Ingredients
- Green or brown lentils - 150 grams
- Red bell pepper - 1 medium, diced
- Cucumber - 1 medium, diced
- Red onion - 1 small, finely chopped
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 100 grams, halved
Steps
- Rinse the lentils under cold water and place them in a pot with 450 ml of water. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until tender. Drain and let cool.
- While the lentils are cooking, prepare the vegetables. Dice the red bell pepper and cucumber, finely chop the red onion, and halve the cherry tomatoes.
- In a large mixing bowl, combine the cooled lentils, diced bell pepper, cucumber, red onion, cherry tomatoes, chopped parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, ground cumin, salt, and black pepper to create the dressing.
- Pour the dressing over the lentil salad and toss gently to combine all ingredients. Adjust seasoning to taste.
- Serve immediately or refrigerate for 30 minutes for flavors to meld.
