Ingredients

  • Green or brown lentils - 150 grams
  • Red bell pepper - 1 medium, diced
  • Cucumber - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Rinse the lentils under cold water and place them in a pot with 450 ml of water. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until tender. Drain and let cool.
  2. While the lentils are cooking, prepare the vegetables. Dice the red bell pepper and cucumber, finely chop the red onion, and halve the cherry tomatoes.
  3. In a large mixing bowl, combine the cooled lentils, diced bell pepper, cucumber, red onion, cherry tomatoes, chopped parsley, and mint.
  4. In a small bowl, whisk together the olive oil, lemon juice, ground cumin, salt, and black pepper to create the dressing.
  5. Pour the dressing over the lentil salad and toss gently to combine all ingredients. Adjust seasoning to taste.
  6. Serve immediately or refrigerate for 30 minutes for flavors to meld.
