Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Olive oil - 2 tablespoons
  • Fresh parsley, chopped - 2 tablespoons
  • Fresh cilantro, chopped - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Baking powder - 1/2 teaspoon

Steps

  1. In a large mixing bowl, combine the flour, baking powder, salt, black pepper, ground cumin, ground coriander, and paprika.
  2. Make a well in the center and add the warm water and olive oil. Mix until a dough forms.
  3. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
  4. Incorporate the chopped parsley and cilantro into the dough, kneading until evenly distributed.
  5. Cover the dough with a damp cloth and let it rest for 15 minutes.
  6. Divide the dough into 4 equal pieces and roll each piece into a flat round shape (about 0.5 cm thick).
  7. Heat a skillet over medium-high heat and cook each flatbread for about 2-3 minutes on each side, or until golden brown and cooked through.
