Ingredients

  • Couscous - 150 grams
  • Vegetable broth - 250 milliliters
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Ground cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a saucepan, bring the vegetable broth to a boil.
  2. Once boiling, remove from heat and stir in the couscous, olive oil, minced garlic, ground cumin, salt, and black pepper.
  3. Cover the saucepan and let it sit for 5 minutes to allow the couscous to absorb the broth.
  4. After 5 minutes, fluff the couscous with a fork.
  5. Stir in the chopped parsley, cilantro, mint, and lemon juice until well combined.
  6. Taste and adjust seasoning if necessary, then serve warm.
