Ingredients

  • canned chickpeas - 400 grams, drained and rinsed
  • fresh parsley - 30 grams, finely chopped
  • fresh cilantro - 30 grams, finely chopped
  • red onion - 50 grams, finely chopped
  • garlic - 2 cloves, minced
  • ground cumin - 1 teaspoon
  • ground coriander - 1 teaspoon
  • smoked paprika - 1 teaspoon
  • all-purpose flour - 3 tablespoons
  • olive oil - 1 tablespoon (for frying)
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • lemon juice - 1 tablespoon

Steps

  1. In a large bowl, mash the drained chickpeas using a fork or potato masher until mostly smooth but still slightly chunky.
  2. Add the chopped parsley, cilantro, red onion, garlic, ground cumin, ground coriander, smoked paprika, flour, salt, black pepper, and lemon juice to the mashed chickpeas.
  3. Mix all the ingredients thoroughly until they are well combined, then let the mixture rest for 10 minutes.
  4. Shape the mixture into 4 equal-sized patties.
  5. Heat the olive oil in a non-stick skillet over medium heat.
  6. Cook the patties for 4-5 minutes on each side, or until golden brown and crispy.
  7. Serve warm with your favorite dipping sauce or in a pita with fresh vegetables.
