- canned chickpeas - 400 grams, drained and rinsed
- fresh parsley - 30 grams, finely chopped
- fresh cilantro - 30 grams, finely chopped
- red onion - 50 grams, finely chopped
- garlic - 2 cloves, minced
- ground cumin - 1 teaspoon
- ground coriander - 1 teaspoon
- smoked paprika - 1 teaspoon
- all-purpose flour - 3 tablespoons
- olive oil - 1 tablespoon (for frying)
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- lemon juice - 1 tablespoon
Steps
- In a large bowl, mash the drained chickpeas using a fork or potato masher until mostly smooth but still slightly chunky.
- Add the chopped parsley, cilantro, red onion, garlic, ground cumin, ground coriander, smoked paprika, flour, salt, black pepper, and lemon juice to the mashed chickpeas.
- Mix all the ingredients thoroughly until they are well combined, then let the mixture rest for 10 minutes.
- Shape the mixture into 4 equal-sized patties.
- Heat the olive oil in a non-stick skillet over medium heat.
- Cook the patties for 4-5 minutes on each side, or until golden brown and crispy.
- Serve warm with your favorite dipping sauce or in a pita with fresh vegetables.
