Ingredients

  • Chickpeas - 200 grams, cooked and drained
  • Quinoa - 100 grams, cooked
  • Red bell pepper - 1, finely chopped
  • Carrot - 1 medium, grated
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 30 grams, chopped
  • Harissa paste - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for cooking)
  • Whole wheat burger buns - 2
  • Tahini - 2 tablespoons (for sauce)
  • Lemon juice - 1 tablespoon (for sauce)
  • Water - 1 tablespoon (for sauce)
  • Mixed salad greens - for serving

Steps

  1. In a large bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some texture.
  2. Add the cooked quinoa, chopped red bell pepper, grated carrot, red onion, minced garlic, and chopped cilantro to the mashed chickpeas.
  3. Stir in the harissa paste, ground cumin, ground coriander, salt, and black pepper until well combined.
  4. Form the mixture into two burger patties, about 1.5 cm thick.
  5. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
  6. While the patties are cooking, prepare the tahini sauce by mixing tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth.
  7. Toast the whole wheat burger buns in the same skillet for a minute or two until lightly crispy.
  8. Assemble the burgers by placing a patty on each bun, drizzling with tahini sauce, and topping with mixed salad greens. Serve immediately.
