Ingredients
- Chickpeas - 200 grams, cooked and drained
- Quinoa - 100 grams, cooked
- Red bell pepper - 1, finely chopped
- Carrot - 1 medium, grated
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh cilantro - 30 grams, chopped
- Harissa paste - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for cooking)
- Whole wheat burger buns - 2
- Tahini - 2 tablespoons (for sauce)
- Lemon juice - 1 tablespoon (for sauce)
- Water - 1 tablespoon (for sauce)
- Mixed salad greens - for serving
Steps
- In a large bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some texture.
- Add the cooked quinoa, chopped red bell pepper, grated carrot, red onion, minced garlic, and chopped cilantro to the mashed chickpeas.
- Stir in the harissa paste, ground cumin, ground coriander, salt, and black pepper until well combined.
- Form the mixture into two burger patties, about 1.5 cm thick.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the tahini sauce by mixing tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth.
- Toast the whole wheat burger buns in the same skillet for a minute or two until lightly crispy.
- Assemble the burgers by placing a patty on each bun, drizzling with tahini sauce, and topping with mixed salad greens. Serve immediately.
