- All-purpose flour - 200 grams
- Warm water - 120 ml
- Active dry yeast - 5 grams
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Harissa paste - 2 tablespoons
- Zucchini - 100 grams, sliced
- Red bell pepper - 100 grams, sliced
- Red onion - 50 grams, sliced
- Cherry tomatoes - 100 grams, halved
- Spinach - 50 grams
- Nutritional yeast - 2 tablespoons
- Fresh coriander - for garnish
Steps
- In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
- In a large bowl, mix all-purpose flour and salt. Add the yeast mixture and olive oil, and knead until a smooth dough forms. Cover and let rise in a warm place for 20 minutes.
- While the dough is rising, preheat the oven to 220°C (428°F).
- In a mixing bowl, combine zucchini, red bell pepper, red onion, cherry tomatoes, and harissa paste. Toss until the vegetables are well coated.
- Spread the harissa-marinated vegetables on a baking sheet and roast in the oven for 15 minutes.
- Once the dough has risen, roll it out on a floured surface into a 12-inch round. Transfer the dough to a baking tray lined with parchment paper.
- Spread a thin layer of harissa paste over the dough, leaving a small border for the crust. Layer the roasted vegetables and fresh spinach on top.
