- Harissa paste - 2 tablespoons

- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- In a large mixing bowl, combine the diced potatoes, harissa paste, olive oil, minced garlic, cumin, paprika, salt, and black pepper. Toss well to coat the potatoes evenly.
- Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and crispy, flipping halfway through for even cooking.
