Ingredients

  • Harissa paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large mixing bowl, combine the diced potatoes, harissa paste, olive oil, minced garlic, cumin, paprika, salt, and black pepper. Toss well to coat the potatoes evenly.
  3. Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and crispy, flipping halfway through for even cooking.
