Ingredients

  • Cauliflower - 1 medium head (about 500g)
  • Harissa paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Remove the leaves and stem from the cauliflower, and cut it into bite-sized florets.
  3. In a large bowl, mix the harissa paste, olive oil, minced garlic, lemon juice, cumin, paprika, salt, and black pepper to create a marinade.
  4. Add the cauliflower florets to the bowl and toss well until they are evenly coated with the marinade.
  5. Spread the marinated cauliflower florets in a single layer on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and golden brown, stirring halfway through.
  7. Once done, remove from the oven and let cool slightly before garnishing with chopped fresh cilantro.
  8. Serve warm as an appetizer.
