Ingredients

- Harissa paste - 2 tablespoons
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Remove the leaves and stem from the cauliflower, and cut it into bite-sized florets.
- In a large bowl, mix the harissa paste, olive oil, minced garlic, lemon juice, cumin, paprika, salt, and black pepper to create a marinade.
- Add the cauliflower florets to the bowl and toss well until they are evenly coated with the marinade.
- Spread the marinated cauliflower florets in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and golden brown, stirring halfway through.
- Once done, remove from the oven and let cool slightly before garnishing with chopped fresh cilantro.
- Serve warm as an appetizer.
