- Basmati rice - 150 grams
- Vegetable broth - 300 ml
- Harissa paste - 2 tablespoons
- Olive oil - 1 tablespoon
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Carrot - 1 medium, diced
- Zucchini - 1 small, diced
- Cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant, about 3-4 minutes.
- Add the diced bell pepper, carrot, and zucchini to the saucepan. Cook for another 5 minutes until the vegetables are slightly tender.
- Stir in the harissa paste and cook for 1-2 minutes, allowing the flavors to meld.
- Add the rinsed rice to the saucepan, stirring to coat the rice with the harissa and vegetables.
- Pour in the vegetable broth, and season with salt and black pepper to taste. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork.
- Serve hot, garnished with chopped cilantro.
