Ingredients

  • Basmati rice - 150 grams
  • Vegetable broth - 300 ml
  • Harissa paste - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Zucchini - 1 small, diced
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant, about 3-4 minutes.
  3. Add the diced bell pepper, carrot, and zucchini to the saucepan. Cook for another 5 minutes until the vegetables are slightly tender.
  4. Stir in the harissa paste and cook for 1-2 minutes, allowing the flavors to meld.
  5. Add the rinsed rice to the saucepan, stirring to coat the rice with the harissa and vegetables.
  6. Pour in the vegetable broth, and season with salt and black pepper to taste. Bring to a boil.
  7. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  8. Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork.
  9. Serve hot, garnished with chopped cilantro.
