Ingredients

  • Chicken thighs - 400 grams
  • Harissa paste - 3 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh coriander - for garnish

Steps

  1. In a bowl, mix the harissa paste, olive oil, minced garlic, lemon juice, cumin, paprika, salt, and black pepper to create a marinade.
  2. Add the chicken thighs to the marinade and ensure they are well coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours for more flavor.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade, letting excess marinade drip off. Discard the leftover marinade.
  5. Place the chicken thighs on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F).
  6. Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
  7. Garnish with fresh coriander and serve with your choice of side.
