- Chicken thighs - 400 grams
- Harissa paste - 3 tablespoons
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh coriander - for garnish
Steps
- In a bowl, mix the harissa paste, olive oil, minced garlic, lemon juice, cumin, paprika, salt, and black pepper to create a marinade.
- Add the chicken thighs to the marinade and ensure they are well coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours for more flavor.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade, letting excess marinade drip off. Discard the leftover marinade.
- Place the chicken thighs on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F).
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
- Garnish with fresh coriander and serve with your choice of side.
