Ingredients

  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Bell pepper - 1 medium, cut into chunks
  • Zucchini - 1 medium, cut into rounds
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. In a bowl, combine the harissa paste, olive oil, lemon juice, minced garlic, cumin, paprika, salt, and black pepper to create a marinade.
  2. Cut the chicken breast into bite-sized pieces and add to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 15 minutes.
  3. While the chicken marinates, prepare the vegetables by cutting the bell pepper and zucchini as directed.
  4. Preheat the grill or a grill pan over medium-high heat.
  5. Once the chicken has marinated, thread the chicken pieces onto the skewers, alternating with pieces of bell pepper and zucchini.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
