Ingredients

  • Cauliflower - 300 grams
  • Mozzarella cheese (shredded) - 150 grams
  • Parmesan cheese (grated) - 30 grams
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Harissa paste - 3 tablespoons
  • Chicken breast (diced) - 200 grams
  • Red bell pepper (sliced) - 1/2 medium
  • Red onion (sliced) - 1/2 medium
  • Olive oil - 1 tablespoon
  • Fresh cilantro (chopped) - 2 tablespoons

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Rinse and chop the cauliflower into florets, then steam or microwave until tender, about 5-7 minutes.
  3. Once cooled, pulse the cauliflower in a food processor until it resembles rice.
  4. Transfer the cauliflower to a clean kitchen towel and wring out excess moisture.
  5. In a mixing bowl, combine the cauliflower, 100 grams of mozzarella, parmesan cheese, egg, salt, and pepper. Mix until well blended.
  6. Spread the cauliflower mixture onto a parchment-lined baking sheet, forming a circular pizza crust about 1/2 cm thick.
  7. Bake the crust in the preheated oven for 20 minutes or until golden brown.
  8. While the crust is baking, marinate the diced chicken in harissa paste for 15 minutes.
  9. In a skillet, heat olive oil over medium heat. Add the marinated chicken and cook for about 5-7 minutes until cooked through.
  10. Remove the crust from the oven, top with the cooked chicken, sliced bell pepper, onion, and remaining mozzarella cheese.
  11. Return the pizza to the oven and bake for an additional 10-15 minutes until the cheese is bubbly and slightly golden.
  12. Garnish with fresh cilantro before serving.
