Ingredients
- Cauliflower - 300 grams
- Mozzarella cheese (shredded) - 150 grams
- Parmesan cheese (grated) - 30 grams
- Egg - 1 large
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Harissa paste - 3 tablespoons
- Chicken breast (diced) - 200 grams
- Red bell pepper (sliced) - 1/2 medium
- Red onion (sliced) - 1/2 medium
- Olive oil - 1 tablespoon
- Fresh cilantro (chopped) - 2 tablespoons
Steps
- Preheat the oven to 220°C (428°F).
- Rinse and chop the cauliflower into florets, then steam or microwave until tender, about 5-7 minutes.
- Once cooled, pulse the cauliflower in a food processor until it resembles rice.
- Transfer the cauliflower to a clean kitchen towel and wring out excess moisture.
- In a mixing bowl, combine the cauliflower, 100 grams of mozzarella, parmesan cheese, egg, salt, and pepper. Mix until well blended.
- Spread the cauliflower mixture onto a parchment-lined baking sheet, forming a circular pizza crust about 1/2 cm thick.
- Bake the crust in the preheated oven for 20 minutes or until golden brown.
- While the crust is baking, marinate the diced chicken in harissa paste for 15 minutes.
- In a skillet, heat olive oil over medium heat. Add the marinated chicken and cook for about 5-7 minutes until cooked through.
- Remove the crust from the oven, top with the cooked chicken, sliced bell pepper, onion, and remaining mozzarella cheese.
- Return the pizza to the oven and bake for an additional 10-15 minutes until the cheese is bubbly and slightly golden.
- Garnish with fresh cilantro before serving.
