Ingredients

  • Chicken thighs - 400 grams
  • Harissa paste - 3 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh coriander - 2 tablespoons, chopped (for garnish)

Steps

  1. In a medium bowl, combine the harissa paste, olive oil, minced garlic, lemon juice, cumin, paprika, salt, and black pepper to create a marinade.
  2. Add the chicken thighs to the bowl, ensuring they are well-coated with the marinade. Cover and let them marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
  3. Preheat your grill or grill pan over medium-high heat.
  4. Once hot, place the marinated chicken thighs on the grill and cook for about 6-7 minutes on each side, or until the chicken is cooked through (internal temperature should reach 75°C).
  5. Remove the chicken from the grill and let it rest for a few minutes before slicing.
  6. Serve the grilled harissa chicken garnished with fresh coriander.
