  • Lamb shoulder - 200 grams, diced

  • Celery - 1 stalk, chopped
  • Carrot - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Canned tomatoes - 400 grams, crushed
  • Red lentils - 100 grams, rinsed
  • Chickpeas - 100 grams, cooked
  • Vegetable broth - 800 milliliters
  • Cilantro - 30 grams, chopped
  • Parsley - 30 grams, chopped
  • Ground cinnamon - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground black pepper - 1/2 teaspoon
  • Salt - to taste
  • Lemon - 1, juiced

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the diced lamb and brown on all sides, about 5-7 minutes.
  2. Add the chopped onion, celery, and carrot to the pot. Sauté until the vegetables are softened, about 5 minutes.
  3. Stir in the minced garlic, ground cinnamon, ginger, cumin, and black pepper. Cook for 1-2 minutes until fragrant.
  4. Add the crushed tomatoes, vegetable broth, red lentils, and cooked chickpeas. Bring to a boil.
  5. Reduce the heat to low and let the soup simmer for about 30 minutes, stirring occasionally, until the lentils are tender.
  6. Stir in the chopped cilantro, parsley, and lemon juice. Season with salt to taste.
  7. Serve hot, garnished with additional cilantro and lemon wedges if desired.
