- Zucchini noodles - 200 grams
- Ground lamb - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Diced tomatoes - 200 grams (canned or fresh)
- Fresh cilantro - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
- Water - 250 ml
Steps
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground lamb to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the tomato paste, diced tomatoes, cumin, cinnamon, paprika, salt, and black pepper. Mix well and let it simmer for about 5 minutes.
- Add the water to the skillet, bring it to a gentle boil, then reduce the heat and let it simmer for another 10 minutes until the sauce thickens slightly.
- While the sauce is simmering, prepare the zucchini noodles. You can either sauté them in a separate pan for 2-3 minutes or leave them raw for a crunchier texture.
- Once the sauce is ready, remove it from heat and stir in the chopped cilantro and parsley, along with the lemon juice.
- To serve, place the zucchini noodles in bowls and top with the harira lamb sauce. Garnish with additional herbs if desired.
