Ingredients

  • Zucchini noodles - 200 grams
  • Ground lamb - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Diced tomatoes - 200 grams (canned or fresh)
  • Fresh cilantro - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Water - 250 ml

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  2. Add the ground lamb to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
  3. Stir in the tomato paste, diced tomatoes, cumin, cinnamon, paprika, salt, and black pepper. Mix well and let it simmer for about 5 minutes.
  4. Add the water to the skillet, bring it to a gentle boil, then reduce the heat and let it simmer for another 10 minutes until the sauce thickens slightly.
  5. While the sauce is simmering, prepare the zucchini noodles. You can either sauté them in a separate pan for 2-3 minutes or leave them raw for a crunchier texture.
  6. Once the sauce is ready, remove it from heat and stir in the chopped cilantro and parsley, along with the lemon juice.
  7. To serve, place the zucchini noodles in bowls and top with the harira lamb sauce. Garnish with additional herbs if desired.
