- Basmati rice - 150 grams
- Chickpeas (canned, drained) - 100 grams
- Tomato (diced) - 1 medium
- Onion (finely chopped) - 1 small
- Carrot (diced) - 1 medium
- Celery (diced) - 1 stalk
- Garlic (minced) - 2 cloves
- Fresh coriander (chopped) - 2 tablespoons
- Fresh parsley (chopped) - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 400 ml
- Lemon (juiced) - 1
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes before draining.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.
- Stir in the diced tomato, chickpeas, ground cumin, paprika, ground cinnamon, salt, and black pepper. Cook for another 3-4 minutes until the tomatoes start to break down.
- Pour in the vegetable broth and bring to a boil. Add the drained rice and stir well. Reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork and mix in the chopped coriander, parsley, and lemon juice before serving.
