Ingredients

  • Pizza dough - 250 grams
  • Chickpeas (cooked and drained) - 100 grams
  • Carrot (diced) - 1 medium
  • Zucchini (sliced) - 1 small
  • Red bell pepper (sliced) - 1 small
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Tomato paste - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Vegetable broth - 100 ml
  • Olive oil - 2 tablespoons
  • Fresh coriander (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Feta cheese (crumbled) - 50 grams
  • Olives (sliced) - 30 grams

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft, about 3 minutes.
  3. Add the diced carrot, sliced zucchini, and red bell pepper to the skillet. Cook for another 5 minutes until the vegetables begin to soften.
  4. Stir in the cooked chickpeas, tomato paste, cumin, cinnamon, paprika, vegetable broth, salt, and black pepper. Simmer for 5-7 minutes until the mixture thickens slightly.
  5. Roll out the pizza dough on a floured surface to your desired thickness. Transfer the dough to a pizza stone or baking sheet.
  6. Spread the chickpea and vegetable mixture evenly over the pizza base.
  7. Sprinkle crumbled feta cheese and sliced olives over the top.
  8. Drizzle with the remaining tablespoon of olive oil.
  9. Bake in the preheated oven for 12-15 minutes or until the crust is golden brown.
  10. Remove from the oven, garnish with chopped fresh coriander, and let it cool slightly before slicing.
