Ingredients
- Pizza dough - 250 grams
- Chickpeas (cooked and drained) - 100 grams
- Carrot (diced) - 1 medium
- Zucchini (sliced) - 1 small
- Red bell pepper (sliced) - 1 small
- Onion (finely chopped) - 1 small
- Garlic (minced) - 2 cloves
- Tomato paste - 2 tablespoons
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Paprika - 1 teaspoon
- Vegetable broth - 100 ml
- Olive oil - 2 tablespoons
- Fresh coriander (chopped) - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Feta cheese (crumbled) - 50 grams
- Olives (sliced) - 30 grams
Steps
- Preheat the oven to 220°C (428°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft, about 3 minutes.
- Add the diced carrot, sliced zucchini, and red bell pepper to the skillet. Cook for another 5 minutes until the vegetables begin to soften.
- Stir in the cooked chickpeas, tomato paste, cumin, cinnamon, paprika, vegetable broth, salt, and black pepper. Simmer for 5-7 minutes until the mixture thickens slightly.
- Roll out the pizza dough on a floured surface to your desired thickness. Transfer the dough to a pizza stone or baking sheet.
- Spread the chickpea and vegetable mixture evenly over the pizza base.
- Sprinkle crumbled feta cheese and sliced olives over the top.
- Drizzle with the remaining tablespoon of olive oil.
- Bake in the preheated oven for 12-15 minutes or until the crust is golden brown.
- Remove from the oven, garnish with chopped fresh coriander, and let it cool slightly before slicing.
