Ingredients

  • All-purpose flour - 250 grams
  • Cold water - 100 ml
  • Olive oil - 50 ml
  • Salt - 1 teaspoon
  • Lentils (red or green) - 100 grams
  • Canned chickpeas - 100 grams, drained and rinsed
  • Canned diced tomatoes - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Fresh coriander - 20 grams, chopped
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 200 ml
  • Lemon juice - 1 tablespoon

Steps

  1. In a mixing bowl, combine the flour and salt. Add the olive oil and cold water gradually, mixing until a dough forms. Knead for about 5 minutes until smooth. Cover and let rest for 15 minutes.
  2. In a pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté until the vegetables are soft, about 5-7 minutes. Add the minced garlic and cook for another minute.
  3. Stir in the lentils, canned diced tomatoes, chickpeas, vegetable broth, cumin, cinnamon, paprika, black pepper, and lemon juice. Bring to a boil, then reduce heat and simmer for about 15-20 minutes until the lentils are tender and the mixture thickens. Stir in the fresh coriander and remove from heat.
  4. Preheat your oven to 200°C (400°F). Roll out the rested dough on a floured surface into a large circle, about 3-4 mm thick.
  5. Transfer the rolled dough to a greased pie dish, allowing the edges to hang over. Pour the lentil and vegetable mixture into the pie crust.
  6. Fold the overhanging dough over the filling, creating a rustic edge. Brush the top with a little olive oil.
  7. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown.
  8. Allow to cool slightly before serving. Cut into wedges and enjoy warm.
