Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Olive oil - 2 tablespoons
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 3 cloves
  • Carrot (diced) - 1 medium
  • Celery (diced) - 1 stalk
  • Bell pepper (diced) - 1 medium
  • Tomato (diced) - 1 large
  • Canned chickpeas (drained and rinsed) - 240 grams
  • Vegetable broth - 500 ml
  • Cilantro (fresh, chopped) - 2 tablespoons
  • Parsley (fresh, chopped) - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Salt - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent.
  3. Add the diced carrot, celery, and bell pepper to the pan. Cook for about 5-7 minutes until the vegetables are tender.
  4. Stir in the diced tomato, canned chickpeas, vegetable broth, cilantro, parsley, cumin, cinnamon, ginger, turmeric, black pepper, and salt. Bring to a simmer.
  5. Allow the mixture to simmer for 10-15 minutes, stirring occasionally, until the flavors meld and the broth thickens slightly.
  6. Add the cooked pasta to the vegetable and chickpea mixture. Stir well to combine and heat through for about 2-3 minutes.
  7. Finish with a splash of lemon juice, adjust seasoning if needed, and serve hot.
