- Pasta (spaghetti or linguine) - 200 grams
- Olive oil - 2 tablespoons
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 3 cloves
- Carrot (diced) - 1 medium
- Celery (diced) - 1 stalk
- Bell pepper (diced) - 1 medium
- Tomato (diced) - 1 large
- Canned chickpeas (drained and rinsed) - 240 grams
- Vegetable broth - 500 ml
- Cilantro (fresh, chopped) - 2 tablespoons
- Parsley (fresh, chopped) - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground ginger - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Salt - to taste
- Lemon juice - 1 tablespoon
Steps
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent.
- Add the diced carrot, celery, and bell pepper to the pan. Cook for about 5-7 minutes until the vegetables are tender.
- Stir in the diced tomato, canned chickpeas, vegetable broth, cilantro, parsley, cumin, cinnamon, ginger, turmeric, black pepper, and salt. Bring to a simmer.
- Allow the mixture to simmer for 10-15 minutes, stirring occasionally, until the flavors meld and the broth thickens slightly.
- Add the cooked pasta to the vegetable and chickpea mixture. Stir well to combine and heat through for about 2-3 minutes.
- Finish with a splash of lemon juice, adjust seasoning if needed, and serve hot.
