Steps
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrot, celery, and red bell pepper; cook for another 5 minutes until slightly softened.
- Add the ground cumin, coriander, paprika, and turmeric, stirring to combine and cook for 1 minute until fragrant.
- Pour in the canned diced tomatoes and fish stock (or water), and bring to a simmer.
- Reduce heat and let the soup simmer for 10 minutes to allow the flavors to meld.
- Add the fish fillets to the pot, gently stirring them into the soup. Cook for an additional 5-7 minutes until the fish is cooked through and flakes easily.
- Season the soup with salt, black pepper, lemon juice, chopped parsley, and cilantro before serving.
