  • Parsley - 1/4 cup, chopped
  • Lemon juice - 2 tablespoons
  • Fish stock - 500 ml
  • White fish fillets (e.g., cod or haddock) - 200 grams, cut into bite-sized pieces
  • Shrimp - 100 grams, peeled and deveined
  • Chickpeas - 100 grams, cooked
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced celery, and diced carrot to the pot. Sauté for an additional 3-4 minutes until the vegetables are softened.
  3. Stir in the chopped tomatoes and tomato paste, cooking for another 5 minutes until the tomatoes break down.
  4. Add the chopped cilantro, parsley, cumin, paprika, cinnamon, salt, and black pepper. Mix well and cook for 2 minutes to release the flavors.
  5. Pour in the fish stock and bring the mixture to a gentle simmer. Allow it to cook for 10 minutes.
  6. Add the fish pieces and shrimp to the pot, along with the cooked chickpeas. Simmer for another 5-7 minutes until the seafood is cooked through.
  7. Stir in the lemon juice, adjust seasoning if necessary, and remove from heat.
  8. Serve hot, garnished with additional cilantro and lemon wedges on the side.
