Ingredients

  • Red lentils - 100 grams
  • Whole wheat pasta - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Canned tomatoes - 200 grams, crushed
  • Vegetable broth - 500 ml
  • Cilantro - 1/4 cup, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, cut into wedges for serving

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery. Sauté for about 5 minutes until the vegetables soften.
  2. Stir in the cumin, paprika, cinnamon, salt, and black pepper. Cook for another minute until fragrant.
  3. Add the crushed tomatoes and vegetable broth. Bring to a simmer and cook for 10 minutes.
  4. Rinse the red lentils under cold water and add them to the pot. Simmer for an additional 10 minutes until the lentils are tender.
  5. Meanwhile, cook the whole wheat pasta in a separate pot according to package instructions. Drain and set aside.
  6. Once the lentils are cooked, stir in the cooked pasta and chopped cilantro. Adjust seasoning to taste.
  7. Serve hot with lemon wedges on the side.
