- Red lentils - 100 grams
- Whole wheat pasta - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Canned tomatoes - 200 grams, crushed
- Vegetable broth - 500 ml
- Cilantro - 1/4 cup, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, cut into wedges for serving
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery. Sauté for about 5 minutes until the vegetables soften.
- Stir in the cumin, paprika, cinnamon, salt, and black pepper. Cook for another minute until fragrant.
- Add the crushed tomatoes and vegetable broth. Bring to a simmer and cook for 10 minutes.
- Rinse the red lentils under cold water and add them to the pot. Simmer for an additional 10 minutes until the lentils are tender.
- Meanwhile, cook the whole wheat pasta in a separate pot according to package instructions. Drain and set aside.
- Once the lentils are cooked, stir in the cooked pasta and chopped cilantro. Adjust seasoning to taste.
- Serve hot with lemon wedges on the side.
