Ingredients

  • Chicken breast - 250 grams, diced
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomato - 1 large, diced
  • Chickpeas - 100 grams, cooked
  • Harissa - 1 tablespoon
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Chicken broth - 500 ml
  • Pasta (small shape) - 100 grams
  • Fresh coriander - 2 tablespoons, chopped
  • Lemon - 1, for serving

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  2. Add the diced chicken and cook until browned on all sides, about 5-7 minutes.
  3. Stir in the diced carrot and celery, cooking for another 3-4 minutes.
  4. Add the diced tomato, chickpeas, harissa, cumin, cinnamon, paprika, salt, and pepper. Stir well to combine.
  5. Pour in the chicken broth and bring the mixture to a boil. Then reduce the heat and let it simmer for 15 minutes.
  6. Add the pasta to the pot and cook according to package instructions until al dente, about 8-10 minutes.
  7. Once the pasta is cooked, stir in the chopped coriander and adjust seasoning if necessary.
  8. Serve hot with a wedge of lemon on the side for a fresh squeeze.
