- Chicken breast - 250 grams, diced
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Tomato - 1 large, diced
- Chickpeas - 100 grams, cooked
- Harissa - 1 tablespoon
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Chicken broth - 500 ml
- Pasta (small shape) - 100 grams
- Fresh coriander - 2 tablespoons, chopped
- Lemon - 1, for serving
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the diced chicken and cook until browned on all sides, about 5-7 minutes.
- Stir in the diced carrot and celery, cooking for another 3-4 minutes.
- Add the diced tomato, chickpeas, harissa, cumin, cinnamon, paprika, salt, and pepper. Stir well to combine.
- Pour in the chicken broth and bring the mixture to a boil. Then reduce the heat and let it simmer for 15 minutes.
- Add the pasta to the pot and cook according to package instructions until al dente, about 8-10 minutes.
- Once the pasta is cooked, stir in the chopped coriander and adjust seasoning if necessary.
- Serve hot with a wedge of lemon on the side for a fresh squeeze.
