Ingredients

  • Zucchini - 2 medium

  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Cherry tomatoes - 150 grams, halved
  • Red onion - 1/4, thinly sliced

Steps

  1. Preheat the grill to medium-high heat.
  2. Slice the zucchini lengthwise into 1/2 cm thick strips.
  3. In a bowl, mix olive oil, ground cumin, smoked paprika, salt, and black pepper.
  4. Brush the zucchini strips with the spice mixture on both sides.
  5. Place the zucchini on the grill and cook for about 3-4 minutes on each side until grill marks appear and the zucchini is tender.
