- Zucchini - 2 medium (approximately 300g)
- Olive oil - 2 tablespoons (30ml)
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your grill or grill pan over medium-high heat.
- Wash the zucchini and slice them into 1/2 cm thick rounds.
- In a mixing bowl, combine olive oil, minced garlic, ground cumin, paprika, cayenne pepper, salt, and black pepper.
- Add the zucchini slices to the bowl and toss until they are evenly coated with the spice mixture.
- Once the grill is hot, place the zucchini slices on it in a single layer.
- Grill for about 3-4 minutes on each side, or until they are tender and have nice grill marks.
- Remove the zucchini from the grill and transfer to a serving plate.
- Garnish with freshly chopped parsley before serving.
