  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon

  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the grill to medium-high heat.
  2. Wash and cut the zucchini, eggplant, bell pepper, and red onion into bite-sized pieces.
  3. In a large bowl, combine the chopped vegetables with cherry tomatoes.
  4. In a separate small bowl, mix the olive oil, minced garlic, cumin, coriander, paprika, salt, and black pepper to create a marinade.
