- Eggplant - 1 small (150g)
- Olive oil - 2 tablespoons (30ml)
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (optional for garnish)
Steps
- Preheat the grill to medium-high heat.
- Wash and slice the zucchini, red bell pepper, yellow bell pepper, red onion, and eggplant into even-sized pieces, about 1-2 inches thick.
- In a large bowl, combine the olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper.
- Add the sliced vegetables to the bowl and toss until they are evenly coated with the marinade.
- Let the vegetables marinate for about 10 minutes to absorb the flavors.
