Ingredients

  • Sardines - 4 medium (about 300g total)
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Clean and gut the sardines, if not already done, and rinse them under cold water.
  2. In a bowl, mix together the olive oil, lemon juice, minced garlic, chopped parsley, ground cumin, paprika, salt, and black pepper to create a marinade.
  3. Place the sardines in a shallow dish and pour the marinade over them, ensuring they are well-coated. Let them marinate for at least 15 minutes.
  4. Preheat the grill to medium-high heat.
  5. Once the grill is hot, place the sardines directly on the grill grates and cook for about 3-4 minutes on each side, or until they are cooked through and have nice grill marks.
  6. Remove the sardines from the grill and serve immediately with extra lemon wedges and a sprinkle of fresh parsley if desired.
