Ingredients

  • 2 whole quails (about 250g each)
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground coriander
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1 lemon
  • Fresh herbs (parsley or cilantro) for garnish

Steps

  1. In a bowl, mix olive oil, honey, cumin, smoked paprika, ground coriander, garlic powder, salt, black pepper, and lemon juice to create the marinade.
  2. Place the quails in a resealable plastic bag or shallow dish and pour the marinade over them, ensuring they are well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your grill to medium-high heat. If using a charcoal grill, let the coals burn down until they are covered with white ash.
  4. Remove the quails from the marinade and allow excess marinade to drip off. Discard the remaining marinade.
  5. Place the quails on the grill, breast side down, and grill for about 4-5 minutes. Flip and grill for another 4-5 minutes until they are cooked through and have nice grill marks.
  6. Check that the internal temperature has reached at least 74°C (165°F).
  7. Once cooked, remove the quails from the grill and let them rest for 5 minutes.
  8. Garnish with fresh herbs before serving. Serve with a side of grilled vegetables or a fresh salad.
