Ingredients
- 2 whole quails (about 250g each)
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon ground coriander
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Juice of 1 lemon
- Fresh herbs (parsley or cilantro) for garnish
Steps
- In a bowl, mix olive oil, honey, cumin, smoked paprika, ground coriander, garlic powder, salt, black pepper, and lemon juice to create the marinade.
- Place the quails in a resealable plastic bag or shallow dish and pour the marinade over them, ensuring they are well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.
- Preheat your grill to medium-high heat. If using a charcoal grill, let the coals burn down until they are covered with white ash.
- Remove the quails from the marinade and allow excess marinade to drip off. Discard the remaining marinade.
- Place the quails on the grill, breast side down, and grill for about 4-5 minutes. Flip and grill for another 4-5 minutes until they are cooked through and have nice grill marks.
- Check that the internal temperature has reached at least 74°C (165°F).
- Once cooked, remove the quails from the grill and let them rest for 5 minutes.
- Garnish with fresh herbs before serving. Serve with a side of grilled vegetables or a fresh salad.
