Ingredients

  • White fish fillets (such as cod or haddock) - 300 grams
  • Fresh cilantro, chopped - 2 tablespoons
  • Fresh parsley, chopped - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Ground cumin - 1 teaspoon
  • Ground paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a bowl, combine the chopped cilantro, parsley, minced garlic, ground cumin, paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper to make the chermoula marinade.
  2. Place the fish fillets in a shallow dish and pour the chermoula marinade over them, ensuring they are well coated. Cover and marinate in the refrigerator for at least 15 minutes.
  3. Preheat the grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
  4. Remove the fish from the marinade and let any excess drip off. Place the fish on the hot grill.
  5. Grill the fish for about 4-5 minutes per side, or until it flakes easily with a fork and has nice grill marks.
  6. Remove the fish from the grill and let it rest for a minute before serving.
