Ingredients

  • Eggplant - 1 medium
  • Ground lamb or beef - 200 grams
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled
  • Lemon - 1, juiced

Steps

  1. Preheat your grill or grill pan over medium heat.
  2. Slice the eggplant lengthwise into 1/2 cm thick slices and sprinkle with salt. Let sit for 10 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water and pat dry with paper towels.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute.
  5. Add ground lamb or beef to the skillet, breaking it apart. Cook until browned, about 5-7 minutes.
  6. Stir in cumin, paprika, cinnamon, salt, and black pepper. Cook for an additional 2 minutes until spices are fragrant. Remove from heat and mix in chopped parsley and feta cheese.
  7. Brush both sides of the eggplant slices with the remaining olive oil.
  8. Grill the eggplant slices for about 3-4 minutes on each side until tender and grill marks appear.
  9. Place a spoonful of the meat mixture at one end of each eggplant slice and roll it up tightly.
  10. Secure each roll with a toothpick if necessary and grill the rolls for an additional 2-3 minutes to warm the filling. Squeeze lemon juice over the rolls before serving.
