Ingredients
- Eggplant - 1 medium
- Ground lamb or beef - 200 grams
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled
- Lemon - 1, juiced
Steps
- Preheat your grill or grill pan over medium heat.
- Slice the eggplant lengthwise into 1/2 cm thick slices and sprinkle with salt. Let sit for 10 minutes to draw out moisture.
- Rinse the eggplant slices under cold water and pat dry with paper towels.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute.
- Add ground lamb or beef to the skillet, breaking it apart. Cook until browned, about 5-7 minutes.
- Stir in cumin, paprika, cinnamon, salt, and black pepper. Cook for an additional 2 minutes until spices are fragrant. Remove from heat and mix in chopped parsley and feta cheese.
- Brush both sides of the eggplant slices with the remaining olive oil.
- Grill the eggplant slices for about 3-4 minutes on each side until tender and grill marks appear.
- Place a spoonful of the meat mixture at one end of each eggplant slice and roll it up tightly.
- Secure each roll with a toothpick if necessary and grill the rolls for an additional 2-3 minutes to warm the filling. Squeeze lemon juice over the rolls before serving.
