Ingredients

  • Chicken thighs - 400 grams
  • Fresh cilantro - 30 grams
  • Fresh parsley - 30 grams
  • Garlic - 3 cloves
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a food processor, combine cilantro, parsley, garlic, cumin, coriander, paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper. Blend until a smooth paste forms.
  2. Place the chicken thighs in a bowl or a resealable plastic bag and pour the chermoula marinade over them. Ensure the chicken is evenly coated, then marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.
  3. Preheat your grill to medium-high heat. Remove the chicken from the marinade and let any excess drip off.
  4. Grill the chicken thighs for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F) and the chicken is nicely charred.
