Ingredients

  • Cauliflower - 1 large head
  • Olive oil - 3 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic powder - 1 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Tahini - 1 tablespoon

Steps

  1. Preheat your grill or grill pan to medium-high heat.
  2. Remove the leaves from the cauliflower and trim the stem, then slice the cauliflower head into 2 cm thick 'steaks'.
  3. In a small bowl, mix together the olive oil, ground cumin, ground coriander, smoked paprika, cinnamon, salt, black pepper, and garlic powder to create a marinade.
  4. Brush both sides of the cauliflower steaks generously with the marinade.
  5. Place the cauliflower steaks on the grill and cook for about 5-7 minutes on each side, until they are tender and have nice grill marks.
  6. While the cauliflower is grilling, prepare the herb sauce by mixing the chopped cilantro, parsley, lemon juice, tahini, and a pinch of salt in a bowl.
  7. Once the cauliflower steaks are cooked, remove them from the grill and drizzle with the herb sauce before serving.
