Grilled Artichokes

Ingredients
- Artichokes - 2 large
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Coriander - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Prepare the artichokes by cutting off the top 1/3 of each artichoke and trimming the stem to about 5 cm. Remove any small leaves at the base.
- In a large pot, bring salted water to a boil. Add the artichokes and simmer for about 20-25 minutes until tender but still firm.
- While the artichokes are cooking, prepare the marinade by mixing olive oil, lemon juice, minced garlic, cumin, paprika, coriander, salt, and black pepper in a bowl.
- Once the artichokes are cooked, drain them and let them cool slightly. Cut them in half lengthwise and remove the fuzzy choke from the center.
- Preheat the grill to medium-high heat. Brush the cut sides of the artichokes with the marinade.
- Place the artichoke halves on the grill, cut side down, and grill for about 5-7 minutes until they are nicely charred.
- Flip the artichokes and grill for another 5 minutes, brushing with more marinade if desired.
- Remove from the grill, garnish with fresh parsley, and serve warm.
