Ingredients

  • Artichokes - 2 large
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Coriander - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Prepare the artichokes by cutting off the top 1/3 of each artichoke and trimming the stem to about 5 cm. Remove any small leaves at the base.
  2. In a large pot, bring salted water to a boil. Add the artichokes and simmer for about 20-25 minutes until tender but still firm.
  3. While the artichokes are cooking, prepare the marinade by mixing olive oil, lemon juice, minced garlic, cumin, paprika, coriander, salt, and black pepper in a bowl.
  4. Once the artichokes are cooked, drain them and let them cool slightly. Cut them in half lengthwise and remove the fuzzy choke from the center.
  5. Preheat the grill to medium-high heat. Brush the cut sides of the artichokes with the marinade.
  6. Place the artichoke halves on the grill, cut side down, and grill for about 5-7 minutes until they are nicely charred.
  7. Flip the artichokes and grill for another 5 minutes, brushing with more marinade if desired.
  8. Remove from the grill, garnish with fresh parsley, and serve warm.
