  • Black pepper - 1/4 teaspoon
  • Water - 50ml
  • Olive oil - 3 tablespoons (for frying)
  • Fresh parsley - 1 tablespoon (finely chopped, for garnish)

Steps

  1. Wash the zucchinis and slice them into 1/4 inch thick rounds.
  2. In a mixing bowl, combine the chickpea flour, ground cumin, paprika, salt, and black pepper.
  3. Gradually add water to the dry ingredients, whisking until you have a smooth batter.
  4. Dip each zucchini slice into the batter, ensuring it is fully coated.
  5. Heat olive oil in a frying pan over medium heat.
  6. Once the oil is hot, carefully add the battered zucchini slices in batches, making sure not to overcrowd the pan.
  7. Fry the zucchini for about 2-3 minutes on each side or until golden brown and crispy.
