  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 4 tablespoons
  • Flour - 1/2 cup (for dusting)
  • Lemon wedges - for serving

Steps

  1. Clean the sardines, removing the heads and innards, then rinse them under cold water and pat dry with paper towels.
  2. In a bowl, combine minced garlic, cumin, paprika, coriander, salt, black pepper, chili powder, parsley, cilantro, and lemon juice to create a marinade.
  3. Add the cleaned sardines to the marinade, ensuring they are well-coated. Let them marinate for at least 15 minutes.
  4. Heat olive oil in a frying pan over medium heat.
  5. Lightly dust each marinated sardine with flour, shaking off any excess.
  6. Fry the sardines in the heated oil for about 3-4 minutes on each side, or until golden brown and crispy.
  7. Remove the sardines from the pan and place them on paper towels to absorb excess oil.
  8. Serve hot with lemon wedges on the side.
