Steps
- Clean the sardines, removing the heads and innards, then rinse them under cold water and pat dry with paper towels.
- In a bowl, combine minced garlic, cumin, paprika, coriander, salt, black pepper, chili powder, parsley, cilantro, and lemon juice to create a marinade.
- Add the cleaned sardines to the marinade, ensuring they are well-coated. Let them marinate for at least 15 minutes.
- Heat olive oil in a frying pan over medium heat.
- Lightly dust each marinated sardine with flour, shaking off any excess.
- Fry the sardines in the heated oil for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the sardines from the pan and place them on paper towels to absorb excess oil.
