Steps
- Prepare the artichokes by trimming the stem and removing any tough outer leaves. Cut the artichokes into quarters and remove the fuzzy choke inside.
- In a mixing bowl, combine the all-purpose flour, chickpea flour, ground cumin, paprika, cayenne pepper, salt, and black pepper.
- Gradually add the water to the flour mixture, whisking until you achieve a smooth batter.
- Heat vegetable oil in a deep frying pan over medium heat until hot.
- Dip each artichoke quarter into the batter, allowing excess to drip off, then carefully place them in the hot oil.
