Ingredients

  • Artichoke hearts - 2 large

  • Chickpea flour - 50 grams
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 150 milliliters
  • Vegetable oil - for frying
  • Lemon wedges - for serving

Steps

  1. Prepare the artichokes by trimming the stem and removing any tough outer leaves. Cut the artichokes into quarters and remove the fuzzy choke inside.
  2. In a mixing bowl, combine the all-purpose flour, chickpea flour, ground cumin, paprika, cayenne pepper, salt, and black pepper.
  3. Gradually add the water to the flour mixture, whisking until you achieve a smooth batter.
  4. Heat vegetable oil in a deep frying pan over medium heat until hot.
  5. Dip each artichoke quarter into the batter, allowing excess to drip off, then carefully place them in the hot oil.
  6. Fry the artichokes in batches for about 4-5 minutes or until they are golden brown and crispy, turning occasionally.
  7. Using a slotted spoon, transfer the fried artichokes to a paper towel-lined plate to drain excess oil.
