Ingredients

  • White fish fillets (such as cod or tilapia) - 300 grams
  • Fresh cilantro - 30 grams
  • Fresh parsley - 30 grams
  • Garlic - 3 cloves
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a food processor, combine cilantro, parsley, garlic, cumin, coriander, paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper. Blend until smooth to create the chermoula marinade.
  2. Place the fish fillets in a shallow dish and pour half of the chermoula over them, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 15 minutes.
  3. Preheat a grill or skillet over medium-high heat. Once hot, remove the fish from the marinade, letting excess marinade drip off.
  4. Cook the fish for about 4-5 minutes on each side or until the fish is cooked through and flakes easily with a fork.
  5. Serve the cooked fish with the remaining chermoula drizzled on top. Optionally, serve with a side of couscous or salad.
